Five-Minute Summer Barbeque

See? Nice and sticky.

It’s definitely summer here in Vermont and you probably want food that’s quick, light, and goes well with lemonade or, more specifically, {Stevia} Strawberry Lemonade. So, tonight I bring you two 5-minute items: magical, good-on-everything barbeque sauce and delicious sugar-free chocolate popsicles. Well, those are still in the freezer so you’ll have to wait…

In the meantime, here’s my recipe for 5-minute barbeque sauce. I’m not a fancy food blogger, just someone who loves delicious food, so here’s the quick version.

Don’t be put off by the seemingly low-rent ketchup. I swear, it comes out just fine. Let’s take a look at what’s in ketchup: tomato paste, vinegar, onion powder, sugar. The ketchup is a shortcut that works.

5-Minute Barbeque Sauce

1 cup of crushed tomatoes
a few liberal squirts of ketchup
4 lidfuls of apple cider vinegar
1/2 cup of brown sugar
1 T. paprika
2 tsp. chili powder (depending on how hot you want to make it)

dash of cayenne

a sprinkle of chipotle powder or fresh chipotles if you have them
cinnamon (optional)
1 clove of crushed garlic
olive oil (OR butter. butter is better!)

-Saute the garlic in a medium saucepan. Add all other ingredients and cook on high heat until it has reduced to wonderful stickiness. OR, you can cook the chicken (or tofu for you non meat-eaters) in the sauce while it’s reducing. Please adjust the seasonings according to taste and make it your own..this is just a basic guide.

The best part is, you can make this sauce anywhere in the world that you have access to ketchup, vinegar, and brown sugar….even in Korea, which is where I learned to be resourceful when it comes to procuring food that I missed from the US.
